Happy Birthday to Me

I turned 36 yesterday. Where has the time gone? I looked in the mirror, but I didn’t look any different than I did the day before when I was still 35. (Hayley thought I might.) omelet

Brent didn’t like the idea of me cooking for myself on my birthday, but I told him that is what I wanted to do. I made a delicious omelet for breakfast with fresh spinach, parsley, mushrooms, red pepper, scallions, basil, and Monterrey Jack cheese.

Brent took me shopping at Express and helped me pick out some hot summer tops. I found a summer dress at Victoria’s Secret, and some bath products and panties–my idea, not his. :-)

The forecast yesterday was 72 degrees and clear, and I have been wanting to go to the beach. We packed up all our gear and headed for our beach in Saco. The sky was clear, but it didn’t feel like 72 degrees. The ocean breeze must have cooled it down a bit. We ate the curried cranberry chicken salad sandwiches I’d packed for lunch (see recipe below) and headed home shortly after that.

The girls really wanted to have a birthday celebration, so I helped Hayley make me carrot cake. Jenna frosted it, but Skye decided Jenna hadn’t been thorough enough and “fixed” it. According to Jenna, Skye “ruined” it. I thought it turned out nicely and tasted good. :-)

I answered a phone call to hear a large group of people sing “Happy Birthday” to me with remarkable enthusiasm and flair. It turned out to me my sister Tanya’s family and my mom, who is visiting them in Michigan. I had a nice chat with Tanya and my mom.

Brent and I went out to Fore Play after the girls went to bed. It’s a fun little sports pub In Old Port in Portland. We ordered drinks and then played air hockey. The strain and excitement was causing pressure to my head because of the surgery, so we stopped. We played a game of pool and watched the Denver Nuggets beat the LA Lakers, tying up the series–to Brent’s chagrin.

I hadn’t planned on any birthday celebration, but it turned out to be a great day.

Curried Cranberry Chicken Salad

Yield: 5 cups

Ingredients
¾ cup mayonnaise
2 teaspoons lime juice
¾ teaspoon curry powder
2 cups cubed cooked chicken
1 medium apple, diced
¾ cup sweetened dried cranberries
½ cup thinly sliced celery
¼ cup chopped pecans
2 tablespoons thinly sliced green onion

Directions
In a large bowl, combine mayonnaise, lime juice, and curry powder. Stir in all of the remaining ingredients. Cover and chill. Best when served within 8 hours.

    Glad the surgery went fine. Never did see a note from Brent.

    Speaking of Birthdays, Cindy turned 60 last Sunday and next Monday we will be celebrating 40 years together. Doesn’t seem like that long but it has all been a dreamlike experience; for me anyway.
